Don't get me wrong: ice cream and buffalo chicken dip hold a special place in my heart. However, we are all aware of the plethora of consequences associated with a typical Western diet: diabetes, obesity, a host of psychological ramifications, and even environmental issues. Of course, this doesn't mean we have to eat celery and seeds for the rest of our lives (everything in moderation!) However, it does mean that we should learn about how our individual cuisines are impacting the health of those in our respective communities.
I am so blessed to be a 2023 W&J Magellan Scholar. The Magellan Project is an incredible one-of-a-kind opportunity that allows students to plan and embark on their own independent research projects studying anything for which they have a passion. For me, this is nutrition, and I want to share my findings with the world through this blog! Unpacking Your Lunch is all about uncovering the regional differences in nutrition and how they relate to the overall health of that region's population by focusing on several main questions:
-What does a typical day of eating look like for residents in this particular region? Is it characterized by many ethnic or region-specific foods?
-How does this diet seem to affect the wellbeing of the population? Are there any diseases/problems that are more common in this area?
-What recommendations do health professionals have to improve nutrition and health in general in this area?
I hope you find this journey to be as encouraging as it is enlightening. And don't forget to ask yourself: what's really in my lunch today?
